Best Ever Pimento Cheese

I'm not a big fan of Pimento cheese but I've always wanted to make some. I checked out a few recipes online and put different ideas together and came up with one that I like.

I pulled out the old grater and start grating. I did not use the pre-shredded cheese because I heard it does not work as well, so I didn't take a chance.

I had my husband do the garlic mincing since Ive never in my life tried to do that. So together, we made a wonderful pimento cheese worth eating. Oh man! Is it good! I'll never opt for the store bought kind again unless I'm in a pinch for time or convenience.


Pimento Cheese

2 cups shredded sharp cheese
2 cups Pepper Jack cheese
1 block cream cheese (room temp for easy mixing)
1 cup mayonnaise
3 tablespoons pimentos
1 clove of garlic (minced)
1/2 teaspoon onion powder
salt and pepper

Just mix it all up and its ready to eat

If you do not really like pimentos, then opt for sweet red peppers instead. Then you can call it, pepper cheese. ...OK that sounds cheesy. But they say it works just as well as pimentos with hardly a change in the taste.

  1. Ummm! I love pimento cheese. I make mine like this with a couple of differences. I use the whole jar of pimentos and I don't use the garlic and onion powder. Oh, and I add about 1/4 cup chopped pecans. I'm gonna have to try your recipe though. It sounds good and might give me a slightly different taste.

  2. Shucks, you and Laurie make me hungry for pimento cheese. I did not know folks made their own! I thought God made it in containers in the cooler at the gro store. LOL
    Seriously I did not know folks made their own. LOL Yeah, I have lived under a rock.

I love pimento cheese...and your recipe,with the creme cheese sounds wonderful...sometime when you are making it, roast an Anaheim (not hot) pepper on the burner of your stove, watching carefully and turning often until it's nice and dark brown...cool and chop into your cheese spread INSTEAD OF Pimentos....OH MY GOSH...it's sooo good.
    Then, spread it on sliced French bread and slide beneath the broiler of your oven...watch carefully and when the cheese bubbles and the toast is browning, take it out..and now...I've made myself hungry for it...xoxo
