Lite Blueberry French Toast

I've come to learn that some of the things I like to eat can be made "lite". Now, If you would have told me that seven months ago I'd roll my eyes and seriously, probably would not like the taste of low fat, low carb, or sugar free anything.  I still am not a believer that fat free foods are good for you. I think anything can be good for you if you eat it in moderation which I have also learned to do. Small portions every couple hours is the key. But for breakfast hour, I like to fill up on protein and Carbs. But again, keeping them low and moderate.

One of my favorite breakfast items next to waffles and pancakes is French toast. You see where Im at with this, now don't you? Sweet Sweet Sweet. That's fine because I use "sugar free" syrup. How syrup can be sugar free? I'm still trying to figure that one out.

Speaking of french toast and sweetness, I was trying to figure out a way to incorporate french toast in my daily diet. Figuration complete.


Now I would like to share how you can also make this delicious breakfast that is light and somewhat healthy. I mean, "wheat" bread is healthy right?

Blueberry French Toast:

You will need:
2 slices of 40 calorie wheat bread
1/4 cup of blueberries
2 egg whites (1/3 cup)
2 tablespoons of 1% milk.
Spray butter (its free of everything) for cooking.
Sugar free syrup.

How to do it:
In a shallow bowl, whip egg whites and milk.
Microwave blueberries for aprox 30 seconds. (makes them soft and juicy).
Mix the warm blueberries into the egg and milk mixture. (It will be a pretty purple).
Spray frying pan with butter.
Dip each piece of bread into the egg mixture coating both sides.
Fry both sides until lightly brown. 

Serve with sugar free syrup.

You can also top with fruit, jelly, or honey. Syrup is my favorite.
Don't have blueberries? I'm sure this would work just as well with other types of fruit.

Experiment and enjoy.

Skinny Spinach Frittata For One

I recently was looking for a good breakfast recipe I could do that would work well with my diet plan. Since I'm the only one in the house right now that can eat eggs, this recipe works great. Lately I have found that eggs hold me over from breakfast to lunch better than anything else.

This recipe gives me protein and some veggies to get me through to the next meal without feeling hungry. With only 134 calories and 12 grams of protein, this is the perfect little meal for one.

I'd like to share my recipe with you, so grab your whisk and bowl and whip up this little eggcellent choice of mine.


Skinny Spinach Feta Frittata


Ingredients:
1 Cup of fresh spinach
1 Large egg
1 Tablespoon milk (I used 1%)
1 Tablespoon Chopped green pepper (optional)
1 Tablespoon Onion (optional)
2 Tablespoons Part-Skim Ricotta 

Instructions:
Heat oven to 350 degrees
Wilt spinach by heating in a small saucepan with a dash of water. (or place in a steamer).
In a bowl, whisk together eggs, milk, (and pepper and onions). 
Stir in the spinach
Pour into a small greased casserole dish or 6 inch non stick ovenproof skillet. 
Top with spoonfuls of the Ricotta and bake for 20 minutes.


You can change it up a bit by adding your favorite veggies and spices to make it fit your taste.

Enjoy.

Easy College Recipes

We all know that cooking can be time consuming. I mean, who has time to cook in their dorm when there are things to do and people to see. Oh and class.

You can find a lot of frozen microwavable steamed veggies and foods but here are just a few neat tricks you can have fun with and surprise your friends. All you need is a microwave!
Warning: Most are sweet stuff but you know you need the energy.

Fun and easy to do. Adds a twist to the regular romaine noodle kind of night.
 
 
 
With only 2 ingredients! 3 if you count the icing.
 
No cooking required! Quick and easy to take for any party.
 
 "Cream Cheese and Jelly Dip"
This is not real pretty but taste just like cheese cake.
1 block cream cheese
1/2 jar strawberry jam
Mix and dip using cinnamon sugar graham crackers.
This would be awesome for a Halloween party too!
 
 
If you are a parent, a great thing to do is make a little recipe book of some of your own recipes that your son or daughter have always loved yet easy enough for them to do.

Campground Adventure

My vacation has half way began (or half way over if your pessimistic). The eye infection I brought down with me seems to be healing some. Not near as painful but I still look like a cry baby.

Speaking of "eye", Ive had my eye on a little retro camper That was parched up in  the wooded area of the campground. 
We choose to stay ocean front but venture around on out morning walks. 


I just had to stop and look at this little charm. I snapped a couple pictures before I was caught looking like the paparazzi. 


My husband busted my bubble when he noticed right off the bat that this was not an old one but instead, it was a new one. A duplicated model of the old retro Shasta. I still liked it. Its was so darn cute.
Later in the afternoon we grilled out some steaks with a salad,

then headed up to the arcade to play a little skeet ball and enjoy some ice cream before calling it a night. 


Tomorrow will come quickly and before you know it, vacation will be over.

Eye on Vacation

Im going to attempt to blog from my iphone since the internet here is the worst thing since dial up.

Its the beginning of our week long vacation. We are all having a good time so far but its not gone exactly my way.  I have somehow picked up an eye infection. Maybe its just a sty or maybe its pink eye. Im not sure. Its very itchy and red and its painful and swollen. Picture Arnold in "The Terminator".
 

I refuse to see a doctor and just used some prescription eye drops I had from a previous pink eye infection I had over a year ago. 

We started the day doing seperate activities. My daughter and husband went for a run while I skipped on over to the campground church service.


Then We spent the day laying in the sun, then later stocked the camper with food and things we need for the week. 

The wheather was nice with temperatures in the high 80's. I stayed under the umbrella most of this day. I want to take it easy on my tan making sure not to get it all at once.

I cant wait until tomorrow because I spotted a tiny retro camper up in the wooded area of the campground that im dying to get a photo of to put on my christmas list [husband rolls eyes here].  Ill be sure to go for a walk in the morning. 

Im calling it a night. Its not easy typing on this small screeen with one working    eye. Hoping for a more comfortable day tomorrow.

Nutrisystem - I DID IT!

Yes I did it!  I lost 50 lbs. and went from a size 12 to a size 4!

I'm excited and I'm proof that Nutrisystem really works. It was not that hard and actually fun.
This is the only diet that's ever worked for me.

After the first couple weeks, I never "struggled with hunger". I went strictly by the program except for Saturday nights (had to have my Mexican food) and a few family dinners along the way. My weight would go up or down a pound or two every day, but by the end of the week, I was always down something. Sometimes it was an ounce, sometimes a pound or more.

It took dedication and determination. I didn't do any excessive exercise nor did I take ANY diet pills.

I made use of my fitBit and made sure to get in at least 3 miles and/or 9 thousand steps in each day. I kept track of my food intake with MyfitnessPal. I had a lot of online support from my FitBit friends, Nutrisystem support groups and MyfitnessPal friends. We talk about food suggestions, do exercise challenges, praise each other, and share success stories.

Whats next for me? I'm going to continue another month with Nutrisystem and making a new goals, I plan to postpone my food shipments while I try to eat right on my own. If I see the weight starts coming back on, I will just have another month shipped to me. This is a little scary for me to venture out to eating my own meals. For seven months, between my husband and Nutrisystem, It felt like I had my own personal chef  preparing my meals for me while I work.

I plan to keep on walking three to five miles a day and continue eating more healthy snacks between my meals such as veggies, fruits and nuts. I'm staying away from sweets, white breads and potatoes.

People say Nutrisystem is to expensive.
Have you ever added up what you spend in a month on groceries?  How much of those groceries go to waste? Just think about it.
There are ways to save on Nutrisystem. After all the discounts, I ended up spending an average of around $150 per month. Here's are ways I did it.
  • You can get a discount just for having health Insurance. I have Blue Cross Blue Shield and got an extra 30.00 off each month on my orders.
  • Costco.com sales 100.00 Nutrisystem gift cards for 59.00 at certain times. I would order some each month to add to my order. That saved me 80.00.
  • Ask someone (like me) that's using Nutrisystem for a "Buddy Bucks. That's another 30.00 off.
  • Last but not least, you can chat with a counselor , they may have a special promotions.
The website is easy to use and adding your discounts to your order is simple.
You can cancel anytime but the only catch is if you cancel after the first month, they will charge you a fee, but after two months, you can just cancel without any question or fee.
I would still suggest to anyone wanting to try Nutrisystem, to purchase the one week box from Walmart first before you make a commitment.

Hints on loosing weight :
  • Never eat "TO LESS". Eat a little something every 2 hours.
  • If you do exercise, Make sure you eat a little something extra with protein.
  • Drink lots of water.
  • Fiber contributes to weight loss.
  • Don't worry about trying to stay away from carbs. You need some carbs to fuel your body. Really!
  • Eat lots of vegetables especially green ones .
